Zucchini Tots

1 C grated zucchini

1 Large Egg

1/4 C Yellow Onion, chopped

1/4 C Parmesan Cheese (can also use cheddar)

1/4 C Panko Bread Crumbs

Salt & Pepper


1. Preheat oven to 400 degrees. Spray a mini muffin tin with non stick spray and set aside.

2. Grate the zucchini and then place in a dish towel to sqeeze out excess water. (This is an important step-if you skip it, the center of the tots will be soggy even thought he outside is crisp.

3. In a bowl, combine the egg, onion, cheese, bread crumbs, zucchini and salt and pepper.

4. Scoop mixture into muffin tin and bake for 15-18 min or unti the top is brown and set.

Yields: 12 mini muffins
