Pasta with Yellow Squash, Garlic & Mushrooms

  • 8-10  oz of you favorite pasta (we used fettucini)
  • 1-2 Tbs olive oil
  • 2-3 yellow squash, chopped thick
  • 1 package of mini bella mushrooms,sliced
  • 2-3 garlic cloves, chopped
  • Parmesan Cheese

1. Prepare pasta according to package directions. Drain, reserving a bit of water for later use and set aside.

2. In a saute pan, heat olive oil and place yellow squash face down (without stirring)to brown. Add mushrooms. When time to brown other side of yellow squash, add in garlic and saute til all items are are cooked through and golden.

3. Add prepared pasta into pan and combine, adding a little bit of reserved water and/or more olive oil to achieve desired consistency. Top with paremesan and enjoy!
