Cucumber Salad with Jalapenos, Cilantro & Pepitas

4 Cucumbers, peeled and sliced very thin

1/3 C white vinegar

1 Tbs lime juice

2 tsp grated lime zest

1 jalapeno seeded and minced

2 tsp extra virgin olive oil

1 1/2 tsp sugar

1 tsp salt

1 C chopped cilantro

3 Tbs pepitas, toasted


1. Evenly spread cucumbers on paper towel lined baking sheet and refirgerate wile prepping dressing.

2. Bring vinegar to a simmer in a sauce pan over medium low heat, cook until reduced to 2 Tbs (4-6 minutes). Transfer vinegar to a bowl and set aside to cool to room temperature, about 10 mintues. Whisk in lime juice, jalapeno, lime zest, oil, sugar and salt.


3. When ready to serve, add cucumbers and cilantro to dressing and toss to combine. Let stand for 5 minutes. retoss and then add  in pepitas and serve!

Serves 4-6
