Broccoli Raab Sichuan Stir Fry

2 Tbs soy sauce

1 1/2 tsp sugar

1/2 tsp corn starch

1/4 tsp ground white pepper

1/4 tsp red pepper falkes (opt)

1/4 tsp dry mustard

5 Tbs water (divided)

2 Tbs sesame oil

1 1/4 lbs broccoli raab, chopped, stems, florets and leaves divided

3 medium garlics, chopped

1 Tbs minced fresh ginger


1. In a small bowl, stir together soy sauce, sugar, corn starch, white pepper, pepper flakes, mustard and a 2 Tbs of water until sugar dissolves; set aside.

2. In a 12 inch skillet, heat sesame oil until almost smoking. Add broccoli raab stems in an even layer and let brown (about 2 minutes) add florets and brown (about 2 more minutes).

3. Add 3 Tbs of water and cover skillet. Cook until broccoli raab is bright green but still crisp (about 2 minutes). Uncover and let water evaporate .

4. Make a space in the middle and add just a bit more sesame oil to cook the garlic and ginger in (15- 20 seconds). Add broccoli raab leaves and Stir sauce in. Mix together and serve over rice. Garnish with green onions if desired.
